Chicken Soup Recipe for the Chicken Lover’s Soul


Chicken Soup Recipe for the Chicken Lover’s Soul, this seemed an apt title for my chicken soup with us all chicken lovers at home. Soups are a healthy mix of health and taste and there is simply nothing to beat a bowl of hot homemade chicken soup. Chicken soup, with the goodness of animal protein is easy on the stomach and full of nutrition. Going through the long list of chicken recipes on the blog, I realized that soup recipes were completely missing. Making a beginning by adding my soup recipes, the clear chicken soup seemed just the dish to start with. A simple , quick chicken soup recipe this is great for when you crave to have something warm and tasty and is a sure shot winner for a cozy family dinner.

Salad, soup and bread definitely make for a healthy and quick meal. So, to complete the menu with my lettuce chicken salad I added in a clear chicken soup and some bread and dinner ready quick and easy. I had promised to share the recipe of the clear chicken soup recipe in my previous post and here it is.

Ingredients for the Clear Chicken Soup
Chicken Stock – 6 cups
Boiled and Shredded Chicken – 200 to 250 gms
Spring onions (chopped) – 2 to 3 tbsp
White pepper powder– ½ tsp (I had only black pepper on hand, however, for a clearer soup it is best to use white pepper)
Garlic (chopped finely) – 2 tbsp
Salt to taste
Sugar – ½ tsp

Method for the Clear Chicken Soup:
1-Take a deep dish and add in the chicken stock. When it comes to a boil add in the garlic and white pepper powder. Let boil for 2 -3 minutes.
2-Add in the boiled and shredded chicken, salt and sugar. Cover and let boil for another 5 minutes.
3-Add the chopped spring onions. Take off the stove and cover and keep for 2-3 minutes to allow the flavours to inter-mingle and blend well. Serve hot.
