Chicken Fried Rice Recipe - a quick kid friendly meal


Day # 1 Blogging marathon
The Blogging Marathon...a bandwagon of food bloggers have picked up their pots, pans and pens(rather the keyboard) to create a delicious mouthwatering spread for two whole weeks. Srivalli's event, the blogging marathon, is indeed one that I had wished to be part of. When she announced the event this month I did not want to miss out on the opportunity to be interacting with so many bloggers and enjoying a journey of good taste, flavours and a lot of fun. I will be blogging everyday for the next 7 days on my chosen theme - Deceptively Delicious for Kids.

When I think of cooking a meal for my family it has to satisfy two criteria, one of meeting the daily nutritional needs and the other of impressing their taste buds. My daughter who feels she is a little chef herself, has a mind of her own and knows exactly what has gone into the dish. So this means it is a lot of hard work camouflaging vegetables and fruits to get her to eat it without complaining. Over the years however, I have noticed that with exposure to so many tastes and flavours and also sometimes blog hopping with me she is open to ideas and new dishes(except for beetroot and karela of course). However, I do still remember the tough times I did go through to feed my fussy eater. These 7 days are thus, dedicated to all those moms who are looking for ideas to feed their little ones healthy tasty dishes.

Chicken fried rice recipe to me is a complete meal. A dish that meets the nutritional standards and is a delight to the tastebuds as well. An Indo-Chinese fusion the chicken fried rice recipe combines beautifully poultry(protein), vegetables(vitamins and minerals) and rice(carbohydrates). You may combine it with a mixed vegetable/chicken/cauliflower or paneer manchurian. This is a great idea for a Sunday lunch or dinner when you can wrap up your cooking quickly and enjoy a movie or some quality time with family.

Ingredients for Chinese Chicken Fried Rice Recipe:
Rice - 1 glass(approximately 200gms)
Chicken - 200 gms boneless(chopped into very small pieces)
Spring onions - 3 to 4 tbsp
Carrot - 1 small(finely chopped)
Celery - 2 tbsp
Capsicum - 1 (chopped finely)
Beans - 1/2 cup
Garlic - 1 tbsp(finely chopped)
Soya sauce - 2 tbsp
Egg - 1
Salt to taste
Pepper - 3/4 tsp
Oil- 2 to 3 tbsp

Method for Chicken Fried Rice Recipe:
1- Wash and clean the rice. Cook and keep aside to cool(pre-cooked and refrigerated day old rice is best for fried rice). I cooked a glass of basmati rice with 1.5 cups of water for 15 minutes on full power and kept it aside for 10 minutes to cool. Fluffed it with a fork after 10 minutes and kept aside to be used later.
2- Take a pan with a tsp of oil. Add in the beaten egg, a pinch of salt, 1/4 tsp of soya sauce and a pinch of pepper. Scramble the eggs, remove from pan and keep aside.
3- Add a tsp of oil in the same pan and add the chicken pieces. Add salt, 1/4 tsp pepper and 1/2 tsp of soya sauce and let cook till chicken is well done. Remove and keep aside.
4- Add the remaining oil to the same pan. Add in the vegetables and saute. Do not overcook. They must have that slight crunch. Now add in the remaining soya sauce, rice, the scrambled egg and chicken and mix well. Adjust salt. Your fried rice is now ready to serve. Enjoy.
