Chilli Chicken Recipe

Chilli chicken- Chinese? Ask any Mallu(those belonging to the state of Kerala,India) and you would be in for a shock. Any Mallu will tell you what an important place the dish, chilly chicken, has in the cuisine of the God’s Own country - Kerala. The chilli chicken with the Kerala/ Malabar Parotta is a staple dish at most thattukadas (street stalls in Kerala),the Mallu version of fast food.

Here is a dry chilly or chilli chicken recipe that has long been waiting in the wings for its turn in the spotlight. Presenting the Indo-chinese fusion dish, the recipe for chilli chicken dry, that can play perfectly the role of a quick snack or appetizer and also be quick chicken recipe for a side dish with a bowl of hakka noodles/fried rice for a hearty meal with family and friends. The recipe for chilli chicken is a simple, easy and quick chicken recipe that is just what beginners in the kitchen need to prove their culinary skills:).

Ingredients for the recipe of chilli chicken
Chicken – 200 gms(boneless cut into small bite sized pieces)
Salt- to taste
Pepper – ½ tsp
Green chillies – 3 to 4 (slit into 2)
All purpose flour/maida -2 tbsp
Soya sauce – 2 tbsp
Tomato sauce – 1 tbsp
Chilli sauce – 1.5 tbsp
Sugar - ½ tsp
Vinegar – ½ tsp
Capsicum – ½ (chopped into cubes)
Onion – 1 small(chopped into cubes)
Ginger- 1 tsp (finely chopped)
Garlic – 1 tsp (finely chopped)
Oil – 2 tbsp + for deep frying

Method for making chilly chicken:
1- Take a mixing bowl and add in the chicken, salt to taste, pepper powder and mix well. You may add a tbsp or two of water if required. Keep aside for 10 minutes and deep fry. Drain and keep aside.
2- Take a pan and add in 2 tbsp of oil. Now add the finely chopped fresh ginger, garlic and also the green chilli. Saute for a minute. Add in the chopped onion and capsicum. Saute. Add the soya sauce, tomato sauce, chilli sauce and vinegar. Saute for 2 minutes till the vegetables turn soft.
3- Add the sugar. Adjust salt (if you like your chilli chicken very spicy you may add ½ tsp of pepper powder at the stage). Add in the deep fried chicken pieces and mix till all the chicken pieces are well coated.
