Coconut based chicken curry recipe from Ranji's blog



Chicken is a favorite at my place as you know by now and so the hunt for new recipes is forever on. This chicken curry from Ranji's blog must admit fell in love with it at first sight itself and just had to make it.

The recipe did look complicated and a lot of effort at the outset however, as I started with the cooking I soon realized that it is a simple and quick one. With all the ingredients for the masala into the mixer jar and ground to a fine paste half my dish was already done in minutes. As for the chicken I used boneless breast pieces. I made a change by using Maggi coconut milk powder instead of fresh coconut(as we do not get coconut here). The curry came out just perfect and is such a hit at home that I have made it twice already. It goes well with chapatis, rice and dosa.
