Chicken Sandwich - a quick fix Sunday Brunch


Chicken sandwich, yumm, makes my mouth water. I just love sandwiches and the more sinful they are, the better.
This chicken sandwich is a personal favorite as it takes me back in time. This is Amma's chicken sandwich recipe and both my sister and I would wait for the day it is made. I love it and so does everyone at home and have discovered that it is a great way to get my little one to eat veggies without a fuss.

Veggies, mayo and chicken.. a heavenly combo it is and what better way to enjoy a Sunday. This is yet another quick and easy recipe from my kitchen that you would love. Try it and do let me know. Ingredients for the Chicken Sandwich
Chicken - 200 gms (boiled and shredded) (do add 1/4 tsp salt and 1/2 tsp of pepper powder while boiling the chicken for the added flavour)
Cabbage(finely chopped) - 2 cups
Carrot(grated) - 1 cup
Mayonnaise - 1/2 cup ( if you are looking to cut down a few calories you could try a combo of mayyonnaise and hung curd)
Salt to taste
Sugar - 1/2 tsp
Method for making the chicken sandwich:

1- Take a mixing bowl and add in the boiled and shredded chicken, cabbage, carrot, mayo, salt and sugar. Mix well so that the chicken and veggies are well-coated with mayo. You have your filling ready. This Chicken salad can also be served as a topping on toasted bread, monaco biscuits or simply as a salad.

2- Apply a little butter on your slice of bread(optional) and add in the filling. Cover with another slice and cut the sandwich in the desired shape. I have it triangular, you may make small squares or a rectangle. These are ideal for kids birthday parties, Sunday brunch or a quick dinner with a bowl of soup added in.For the vegetarians, minus the chicken too this tastes great.
