Day 1 Blogging Marathon #14
Back to the blogosphere after a really long break this time. It feels great to be posting after so long. There has been so much happening in the real world that I could just barely manage to find time to do some quick blog hopping. Back after a nice long vacation back home, settling down and getting back to the house work and my writing has part of the agenda for the past couple of days.
When I saw Srivalli's announcement of the Blogging Marathon I just couldn't resist the temptation of hopping on the bandwagon of marathoners for a whole week. My chosen theme is "Kid's Delght - snacks under 30 minutes". I would like to make a start with my Tuna salad that I made a few days back for dinner. A quick dinner and happiness levels of hubby and daughter are always one that my recipes cater to. You could serve it as a salad, topping for a snack or filling of a succulent sandwich.
Ingredients for the Tuna Salad:
Tuna - 100 gms (I used canned Tuna which was 100 gms after draining)
Cucumber - 2 tbsp (finely chopped)
Capsicum/Bell Peppers - 2 tbsp (finely chopped)
Mayonnaise - 1 tbsp
Parsley - 1/2 tsp (I used dried parsley)
Spring onions - 2 tbsp (finely chopped)
Paprika - 1/2 tsp
Pepper - 2 pinches
Mustard - to taste (optional - I did not use)
Method for the Tuna Salad/Sandwich:
1- Drain the canned tuna and wash it well in a collander.
2- Put all the ingredients into a mixing bowl and mix well so that they are well-blended.
3- Take a slice of bread and spread a lettuce leaf on it. Spread the Tuna salad and you are ready for a delicious meal. You may serve it as an open sandwich if you so wish.

Being a vegetarian, I really don't know how to comment, may be I can change this to a veggie one!

ReplyDeleteBeing a vegetarian I would like to replace it with Chickpeas. I have read at many places that chickpeas are the closest vegetarian replacement for tuna.
