
Carrot Cake
If you have been wondering how to get your little bundle of joy to eat carrots without a fuss, here's the answer. This easy to make carrot cake recipe is one that is absolutely irresistible(tested and certified to be child friendly). My daughter who is a real fussy eater just loved it and the cake was over before I knew it. With absolutely no butter added this definitely is one that would interest you too.
Carrots are known to be very rich in beta carotene (that's where they get their colour from), Vitamin A, antioxidants, dietary fibre and minerals. High in nutrition and great in taste this quick and easy baking recipe is one that you would love.
Ingredients:
Flour - 1/2 cup
Grated carrots - 1/2 cup (dry over a kitchen towel or tissues to remove the excess water content)
Sugar - 1/2 cup
Oil- 1/2 cup
Eggs -2
Baking powder - 1.5 tsp(not heaped)
Vanilla essence - 1/2 tsp
Walnuts - 1/4 cup (optional) (I did not add)
Method:
1- Sieve together the flour and the baking powder. Add in the sugar, oil, eggs(one after the other), vanilla essence, baking powder and the grated carrots. Mix well to form a smooth batter.
2- Grease the baking dish and pour in the batter.
3- Bake in a preheated oven for 20-25 mins at 180 deg celsius(or between 4 and 5).
4- Cool on a wire rack and cut into slices.
5- Serve with sweetened cream or plain.
