Fish Platter and life on the fast track



Have been back after a great vacation in the God's Own Country-Kerala. God's Own Country scenic beauty at its peak but the best part of going to Kerala for me is that you are going home. Great time at home, freaked out on mom's cooking (there is nothing like it) and of course all the malabar parottas, chilli chicken, biriyani....I can just go on. I just love authentic Kerala cuisine. However, although my taste buds have been very happy all the love for the Kerala food is definitely showing on me physically and have to get down to some heavy gyming now.

The absence for so many days has been settling back after the holidays and also winding up. Yes, we are moving to the magical city of Mumbai and I have been in the winding up mood for the past few days. Just finished with the crockery and the living room and in the afternoon have promised to sort through my daughter's wild collection of books, crayons, colour pencils....you name it and its there in some form or the other. A lot of sorting out to be done and today have decided will not let my laziness overpower me and am going to deal with the clearing head on. Clothes are the next on the list. There are a pile of clothes that I have been keeping away telling myself that I attach them to some memory in the past and yes, would wear it some time. Wearing them has not happened till date so I have decided to give them off this time for sure. My hubby would sure be happy as he is the kind who disposes of unwanted things as early as possible and doesn't hold on and add to the junk like me. :)

Blogging is going to be on a slow pace for the next few weeks. Moving from here, moving into the new home and then settling down is going to take some time. While I wind up my kitchen in the next 2 days I would love to post as and when I do get the time. Have a few recipes that I tried while my parents were here and in the past few days while we were bidding farewell to people. Here is a fish platter that I made while my parents were visiting. My dad just loves it so this one is for him. A complete meal with fried fish, a mayonaise dip, veggies and french fries. Would be best to serve with garlic bread or a plain home made bread.

Ingredients for the fish marinade:
Vinegar - 1 tbsp
Mustard powder - 1/4 tsp
White Pepper Powder - 1/2 tsp
Tomato Sauce - 1 tbsp
Worchestershire Sauce - 2 tbsp
Egg - 1
Maida - 2 to 3 tbsp
Red chilli powder - 1/4 tsp
Salt to taste
Method: Make a paste of the above and marinate the fish pieces.Coat with bread crumbs and deep fry.

Ingredients for the mayonnaise :
I prefer to use store bought eggless mayonnaise however if you would like to make it at home here's the recipe.
Egg-1
Mustard powder 2 pinches
White pepper - 1/2 tsp
Vinegar - 1 tsp
Sugar- 1 tsp
Salt - to taste
Oil - 120 ml for one egg
Method: Put all the ingredients except oil into the mixer and grind adding oil little by little (3-4 times. I like to add in some chopped onions and some minced garlic to the mayonnaise after it is done. Mix with a spoon and serve alongside the fried fish.

For the veggies:
Take a bowl of chopped potatoes and carrots in a bowl. Microwave for 5-6 minutes. Take out in a pan, add some butter (1 tsp) and saute. Season with salt and pepper.

Served with some crispy french fries this fish platter is one that you would love to try again.
